Vegan Almond Butter Banana Smoothie

Don’t think they want to share this one… although they did…

Amazing smoothie that has a bit of substance!

Serves 2

2 frozen bananas
1 huge heaping tablespoon of almond butter
1/2 tsp vanilla
~ 1 – 1 1/2 cups rice milk or liquid stuff, I used some coconut water too

Blend and serve
Depending on how big your bananas are and how thick you like your smoothie, you can play with the amount of liquid.

There’s no other option, but to share!

Kid’s need fat in their diet!  I came up with this smoothie recipe because I was finding that my 3 1/2 year old was always hungry around morning tea time (9-10am) and the traditional piece of fruit just wasn’t cutting it.  Coconut cream and avocado are great sources of fat for kids and a huge cup of this is usually enough to keep them good until lunch.  There’s no way to mess this one up.

Ingredients 

serves about 2

2 frozen bananas (I buy a bunch when they are ripe and cheap, peel them and keep them in the freezer so they’re always ready)

1/3 cup coconut cream or coconut milk

1 avocado

1 tablespoon of carob powder

1 cup of rice milk (more or less depending on how thick you like it)

Directions

blend and serve 🙂

The Chocolate…

Art brought home a whole bunch of leftover cheap chocolate tonight, from Target.  I was sort of annoyed because it was almost time for bed when he came home.  And, it wasn’t JUST chocolate, it was all this toy chocolate stuff… think like stuffed toy bumble bee with chocolate eggs inside and Barbie brand plastic egg with candy bracelet…. yeah… I was stoked… (not).  Oh, don’t worry, it wasn’t ‘palm oil chocolate’ for all of those who know about the palm oil industry. What can I say, Goldie was practically born IN the kitchen. Well, really she was born in the dining area next to the kitchen. It was close to the sink and in a nice cozy spot, so we moved the kitchen table and set up the birthing pool, and that’s where she came out!  It’s no wonder that for the past few months, she’s been eyeing up my food! Down the hatch!

When Margo was about 3 1/2 months old, and tipping the scales at 14 or 15 pounds (~6 kilos), both my mom and grandmother had already been after me for weeks to start Margo on solids!.  My original thought had been, that unless she could put the food in her own mouth, had grown a few teeth and was sitting well, I wasn’t going to bother starting her on solids at all.  If anything in parenting ever confuses me, I always think, ‘What would the cave people have done?’.   Read the rest of this entry
